- A Defense Science Board (DSB) Task Force study) concluded that DoD operations suffer from unnecessarily high -- and growing -- battlespace fuel demand. At ~70% of the tonnage the Army ships into battle, fuel is the single largest consumable, and in-theatre costs render this metric monetarily and logistically dominant compared to all other factors. The three (or four) sink process of washing rinsing and sanitizing consumes hundreds of gallons of water and many gallons of fuel (to heat all of that water) per day. It also requires a lot of space and is currently deployed in a separate tent as a separate system called the Food Sanitation Center. Rack type dishwashers use high pressure hot water to wash rinse and sanitize in one cabinet. They use less than a gallon of water per cycle and the cycle time is less than a minute. Natural gas fired options are available and require 1500 watts or less, mostly for the pump(s). They can do the same job as an entire food sanitation center, but can do so with 20% of the water and fuel and 1/3 of the space. Automatic dishwashers also have a greater potential to reduce water use over batch systems because of their variable water use. The system uses only the water it needs, where the food sanitation center uses water in 60 gallon increments. Furthermore, because the maximum greywater generated by the automatic dishwasher is 1 gal/min, many more greywater systems are compatible with this system than with batch systems. A dishwashing system is desired that is either commercial-off-the-shelf modified or custom designed to be mobile, lightweight, diesel or JP-8 fired, demand 1kW or less power and able to wash large field feeing equipment such as: insulated food containers, 10 gal and 15 gal stockpots, and full sized baking trays. While commercial dishwashers perform as necessary, they weigh 300 lbs or more and are too heavy to move. The desired system will be modular: each piece weighing 100 lbs or less, and easily assembled for use on a kitchen or elsewhere. The width of the dishwasher is to be either 22 inches or 44 inches. The height shall not exceed 50 inches when in an assembled, packed configuration.
