Contractor shall instruct inmates enrolled in the basic culinary arts and food preparation in restaurant management and in additional areas as prescribed by the curriculum of the Food Service Training Program. It is estimated that the total enrollment in the Food Service Training Center will be 18-20 students. The contractor shall provide written reports on testing results and recommendations regarding enrolled students. He/she in conjunction with the regular classroom instructor will provide this information to the Administrative Staff of the Education Department on a regular basis. The contractor's work schedule will not exceed fifteen two our sessions per week. (172)
